Abstract

Abstract

Minuman olahan es thai tea merupakan salah satu minuman teh khas Thailand yang banyak digemari dan mudah dijumpai di Kecamatan Pahandut dan Kecamatan Jekan Raya, karena tempat bejualan yang berada dekat dengan jalan raya. Tujuan dari penelitian ini yaitu untuk mengetahui cemaran mikrobiologi, fisik dan kimia pada minuman olahan es thai tea serta mengetahui kelayakan konsumsi minuman olahan es thai tea di Kecamatan Pahandut dan Kecamatan Jekan Raya.

Penelitian ini menggunakan pendekatan kualitatif dengan jenis penelitian deskriptif eksploratif. Teknik analisis data untuk uji kualitas mikrobiologi menggunakan metode uji MPN Coliform, untuk uji kualitas fisik berdasarkan hasil uji organoleptik, dan untuk uji kualitas kimia berdasarkan hasil zat padat terlarut dan pH. Teknik pengumpulan data menggunakan 1) tes laboratorium untuk menguji kualitas mikrobiologi, 2) lembar uji organoleptik untuk menguji kualitas fisik, 4) uji para meter TDS dan pH untuk menguji kualitas kimia.

Hasil penelitian menunjukkan: 1)Terdapat cemaran mikrobiologi pada minuman olahan es thai tea yang dijual di Kecamatan Pahandut (A, B, C, D) dan Jekan Raya (E, F, G, H) dengan hasil rata-rata nilai MPN Coliform dari keseluruhan sampel 812,34 sel/100 ml sampel, sedangkan nilai MPN Coliform fekal dari keseluruhan sampel sebesar 713,32 sel/100 ml sampel. 2) Terdapat cemaran fisik pada minuman olahan es thai tea yang dijual di Kecamatan Pahandut dan Jekan Raya berdasarkan uji organoleptik yang menunjukkan pada indikator aroma 37,5% responden menyatakan 3 dari 8 depot mempunyai aroma yang tidak sama dengan aroma thai tea, sedangkan 50% responden menyatakan 4 dari 8 depot mempunyai aroma yang hampir sama dengan aroma thai tea, dan 12,5% responden menyatakan 1 dari 8 depot mempunyai aroma yang sama dengan aroma thai tea. 3) Terdapat cemaran kimia pada minuman olahan es thai tea di Kecamatan Pahandut dan Jekan Raya dengan jumlah zat padat terlarut secara keseluruhan sebesar 702,63 ppm, 7 dari 8 depot sampel minuman olahan es thai tea menunjukkan jumlah zat padat terlarut dalam air melebihi batas minimal yang ditetapkan Permenkes No. 492 Tahun 2010 sebesar 500 ppm. 4) Hasil penelitiandidapatkankesimpulanminuman olahan es thai tea di Kecamatan Pahandut menunjukkan nilai cemaran yang lebih rendah dari minuman olahan es thai tea di Kecamatan JekanRaya, namun berpedoman Permenkes RI No. 492 nilai cemaran dikedua Kecamatan menunjukkan angka diatas 0 sel/100 ml sampelyang menjadikan minuman olahan es thai tea dikedua Kecamatan tersebut tidak layak untuk dikonsumsi.

ABSTRACT

Ice thai tea is one of the most popular Thai tea drinks and is easy to find in Pahandut and Jekan Raya districts, because the shops are close to the highway. The purpose of this study was to determine the microbiological, physical and chemical contamination of processed Thai tea iced drinks and to determine the feasibility of consuming Thai iced iced drinks in Pahandut District and Jekan Raya District.

This study uses a qualitative approach with a descriptive explorative research type. The data analysis technique for microbiological quality testing used the MPN Coliform test method, for physical quality tests based on organoleptic test results, and for chemical quality tests based on dissolved solids and pH results. Data collection techniques used 1) laboratory tests to test microbiological quality, 2) organoleptic test sheets to test physical quality, 4) TDS and pH test parameters to test chemical quality.

The results showed: 1) There was microbiological contamination in iced thai tea drinks sold in Pahandut (A, B, C, D) and Jekan Raya (E, F, G, H) subdistricts with the average MPN Coliform value of the total sample was 812.34 cells/100 ml sample, while the value of the fecal Coliform MPN of the entire sample was 713.32 cells/100 ml sample. 2) There is physical contamination in processed Thai tea iced drinks sold in Pahandut and Jekan Raya Districts based on organoleptic tests which show that the aroma indicator 37.5% of respondents stated that 3 out of 8 depots had an aroma that was not the same as the aroma of thai tea, while 50% Respondents stated that 4 out of 8 depots had a similar aroma to the aroma of thai tea, and 12.5% of respondents stated that 1 out of 8 depots had the same aroma as the aroma of thai tea. 3) There is chemical contamination in iced thai tea processed drinks in Pahandut and Jekan Raya Districts with an overall dissolved solids amount of 702.63 ppm, 7 out of 8 sample depots for iced thai tea processed drinks show the amount of dissolved solids in water exceeds the minimum limit stipulated by Permenkes No. 492 Year 2010 amounted to 500 ppm. 4) The results of the study concluded that the processed iced thai tea drink in Pahandut District showed a lower contamination value than the processed ice thai tea drink in Jekan Raya District, but guided by the Minister of Health Regulation No. 492 contamination values in the two sub-districts showed numbers above 0 cells/100 ml of the sample which made the iced thai tea beverage in the two sub-districts unfit for consumption.
